Quick Green Chili Chicken Soup

1 1/2 cups chicken stock divided
2 15oz cans unsalted Great Northern Beans rinsed drained and divided
2 TBSP olive oil
2 TBSP minced garlic
1 C chopped yellow onion
1 TBSP ground cumin
2 4oz cans chopped green chilies
1/2 tsp black pepper
1/2 tsp salt
1 C Shredded cooked chicken breast
2 TBSP fresh lime juice (optional)


Put 1/2 C stock and 1 can beans in blender (or mash the beans by hand and blend in the stock.
heat oil in large pot saute onions 4 minutes, add garlic, stir in 1 1/2 tsp flour, cook 1 minute.
Add cumin and chilies, stir, then add bean mixture, 1 C stock and remaining can of beans, salt and pepper.
Bring to boil, cook medium heat 5 minutes until slightly thickened, add chicken, cook another 2 minutes..
add lime juice if desired.. Serve

I had a bowl of Green Chili beef Soup last week at a restaurant and need to start searching for a recipe. I'll have to try this one too.

This would be a good one to make with a leftover rotiss chick. I make a version of this and float some corn tortilla strips in it.
