doing chicken quarters and ribs this weekend. what should I do with it?

usual sides are:
smoked baked beans
smoked mac and cheese
smoke potatoes
potatoe salad
cucumber and tomato salad
bruschetta


looking for something new. im keen on cool sides with some acidity to cut the grease.

This weekend coming we are doing Canada day, Wifes B day and Cousins Wifes Bday combined. Last night i picked up a bunch of fire works. we are getting both smokers going.

A brisket will go in his egg.
my bradly will handle the sides,

menu looks to be
Brisket
armadillo eggs
smoked mac and cheese
vinigar based slaw
ice cream for dessert.

whats everyones plans for the holiday weekend (be it 1st or 4th lol)

I always like cheesy potatoes - hash brown casserole, twice baked potatoes - any type of potato recipe that has cheese with bbq.

I like a candied smoked salmon so I marinate overnight in teriyaki sauce, garlic and a little sesame oil. The last 15 - 20 minutes of my smoke I paint the salmon with a paste made with brown sugar and either honey or maple syrup. It produces a shiny sweet glaze.

2:1 brown sugar and salt for the brine. Brine for a couple of hours then smoke over applewood to a internal temp of 140

Don't serve smoked sides, you need a difference of flavors. If everything is smoked, all will taste alike. Corn on the cob, baked beans, coleslaw, all good sides.

I do ABTs and chicken at 220° but then crank it up to 300° to finish and crisp up the bacon and chicken skin.

They are awesome but my one tip or recommendation is to slightly par cook the bacon a bit as the smoker temps tend to not crisp it well. I put the bacon in the microwave for at least a minute to give it a head start, still plenty flexible for wrapping.
