It seems like this setup would require safety chains like those required for a goose neck trailer? I didn't see any mention of this in the etrailer.com information.

I believe from your description of how the switches work and based on the pin configuration in the picture you want DPDT on-on switches.The most common configuration for DPDT is on-off-on so you have to look for that.Here is a switch on Amazon
