All state parks in Florida are closed and Jetty Park campground in Cape Canaveral is closed until April 30th. You might have trouble finding a place to stay. I am assuming private RV parks will still be open.
If the trip includes touristy things it's probably not a good idea . On the other hand if you just like going and can be happy sitting outside reading , napping or walking yeah I think it is a great time . We have been thinking about it too .
With so many places being closed it is hard to say whether a trip would be fun or not. Other than that, it is fairly easy to maintain your distance away from other people as you travel, especially if you plan to camp in an isolated area and remain self sufficient. Some National and State Parks are closed and some are partially closed. In Florida the State Parks are open but not for overnight stays. I guess it depends on what you plan to do during a trip. As mentioned the roads may not be crowded(probably will be more trucks than normal) and fuel is less expensive. Check to make sure you will have a place to park and go for it.
