Chocolate Zucchini Cake
1/2 cup soft butter
1/2 cup cooking oil
1.75 cups white sugar
2 eggs
1 tsp. vanilla extract
1/2 cup buttermilk (or add some vinegar to regular milk and let sit a few hours)
2.5 cups all purpose flour
1/2 tsp. baking powder
1 tsp. baking soda
1/4 cup cocoa
1 tsp. salt
1.5 cups shredded zucchini (not more)
1 cup chocolate chips (save for topping)
Mix well in order given. Grease and flour 9x13 pan. Fill with batter and add chocolate chips to top before going to oven. Bake 40 minutes at 350. Test with toothpick.
