I found this recipe and tried it tonight. Fantastic! The recipe also gives instructions for making it in the oven, an Instant Pot or pressure cooker as well as tips for storage and reheat.

I'm going to do the oven method in my dutch oven at the next family gathering at Christmas. Until then I'll be experimenting and tweaking it in the DO. Guess I'll have to do some extra walking for the experimental calories.:C

Last night I made hash with the pork carnitas instead of corned beef. I like this one better. Instead of white potatoes I used sweet potatoes with collards and a load of garlic. Tons of flavor.

Last year we had a Mexican food extravaganza. I had several people from Mexico helping me cook on a fire. Two sisters grew up in a village with no roads to it. We made everything from scratch. I have a piece of sheet metal to use as a comal for making tortillas. We had 4 kinds of homemade salsa, charro beans, rice, several salads and fresh fruit. We got ready before the 40 guests arrived by playing Mexican music. Plenty of Spanish spoken. It felt like we were in Mexico. Las Hermanas shared some tiny shots of tequila while they cooked. Muy deliscioso.

Yah, I'm thinking in the InstaPot,should be enough, 2 hrs with the Generator which is sort of a routine now, and I like the stir fry on skillet... or MW. heheh, my go-to thing now. Used to hate "Nuking Food" but now it's a real convenience... thanks..

It only took 2 hours in my Dutch ovens (DOs act almost like a pressure cooker with their heavy lids). I made two roasts so two DOs. I shredded both then fried up just enough in the skillet for supper.

I vac-sealed the rest in dinner-sized portions and popped them in the freezer. There's enough for 4 more meals for Herself and myself. All I have to do is defrost in the mw and stir fry it in the skillet. Four almost instant meals for 2 hours cooking time. Nice part is I can take those vac-sealed portions with us in the mh and be able to have carnitas on the road. Oorah!

I have made them in a Dutch oven many times over a wood fire. You do not need to cook for 8 hours. four or five is plenty.

An important last step is to shred the pork and mix with some fresh garlic.

Looking good, but 8-hrs cooking...

Hard to do while boondocking.. I could do the 90 min in the instaPot but not 8-hrs worth... looks good though, thanks.
