The plastic clip attached to the cooling fins holds the thermistor. Moving it up on the fin should bring the temps down, although the difference from very top to very bottom of the fin will only be about 2 degrees. Moving the clip to a fin further to the left should also increase the cooling, but I'm not sure how much. In theory to get the coldest temps you'd want the clip on the far left fin at the top, but the thermistor cord probably isn't long enough to reach there. Make sure the thermistor is actually in the plastic clip - I tend to knock mine loose when putting things in the refrigerator.
The temps here in N Texas (Dallas) have been very hot and anything over about 85 really stresses the RV refrigerators. If you can park where the refrigerator side of the RV is shaded that will help a bit too.
