Thinking about taking Hwy 93 through NV instead of I-15. So then do I take 319/56/18 into St. George? Or 56 over to I-15? Looking for easy RV driving.

Also, does anybody know of a place to overnight between Ely and Cathedral Gorge State Park? Just want alternatives (if there are any), not sure how far I'll get each day.

I live on 18. The route you proposed is the one we take all the time.

The route you've picked is fine. SR 18 is the shortest way to St. George.

As for Cave Lake, love it. The park has two campgrounds; Lake View and Elk Flats. Lake View is quite tight for larger RVs, anything much over 30' will have some difficulty negotiating some of the turns although I've seen 35'+ rigs in there. Elk Flats is a "newer" CG and better suited for bigger stuff. Of note, Elk Flats has only back in sites.

The campground(s) are primitive but that's more than made up for by the setting. We truly enjoy it! We drive right through Ely and it's couple of RV Parks to stay at Cave Lake.

Hwy 319 & 56 are good two lane roads to Cider City,UT.don't know anything about Hwy.18.

Cave Lake SP. just a few miles east of Ely on Hwy.50, we stayed their this last April, not a lot of big RV sites, gravel sites, no hook ups, water and dump just before you get in to the CG.
Their is a RV park about 25 miles on Hwy 50 east of Ely just before you go south on Hwy. 93, it looks like gravel parking but may be OK for over night. Cathedral Gorge State Park is a nice desert SP. we stayed over night and will do it again.

I've done 56/319 from Cedar City to Calente - that's an easy drive across open country.
