Waste tank size is one of the most common underestimated items when purchasing an RV. It is silly how small many of them are.

Waste tanks
Do your waste tanks connect and use a common drain header?
If they do.........install another drain valve on common header.
With it closed...you can equalize waste tanks by opening their drain valves.
My galley is 28 gal but grey is 50. Galley gets full first so I just equalize to grey.
Or to black.
Whichever has less........

I can't imagine trying to swap out tanks. It's very likely that the reason they are the size they are is due to space constraints.
Have you looked into gray water totes? They range from small ones that you pull to big ones that you can attach to the back of your vehicle to roll to a dump station (or at least away from your neighbor :)).
