I have taken both Interstate options and I much prefer I25 N to I80W if you are looking for an easy relaxing drive. If you want to take a trip with amazing scenic stops along the way then the route would be I-70W to 15N. Let us know what you are interested in and we can give you some "must do" stops along the way.
What I post is my 2 cents and nothing more. Please don't read anything into my post that's not there. If you disagree, that's OK.
Can't we all just get along?

Think you have it right - Slide off I-70 at exit 214 go till you hit Rt 128 then follow that into Moab. Slide up to Arches then over to Canyonlands then take 191 up to SLC.

Beautiful drive -- easy -- and will give you a little of the Utah you read about, HOT this time of year but in the evenings or if you are lucky and its Cloudy you can see a lot at first light and at sunset.
If you are into a photo Journal just remember to get the sun at your back to get the better shots.

We took 40 from Park City to Denver in a 38' Pace Arrow Diesel pulling 05 Jeep. Just make SURE you stay in the same gear going down as going up! Never a problem with the roads, just LOTS of mountains.

I 70 is certainly the more scenic way to go. You can take the short cut from Salina UT up to Scipio and I 15. We've done that several times with our rig.

If you have the time, Arches and Deadhorse point are wonderful.

The main difference is I80 is interstate the whole way. Highway 6 through UT has more towns that you have to slow down to pass through.

Mapquest shows I80 to be only 8 miles longer and a few minutes faster and, as I recall, less steep grades.

well then, go west young man!!! Just took that route. Nice at Arches but busy as usual, a little hot elsewhere.

I have been west of Denver in a car on i70 and those mountains do look a bit intimidating when I think about taking them on with a motorhome pulling my car but heck if an 18 wheeler can make it so can I . I was just thinking that the northern route looked a little easier and less mountainous.
