Has anyone added (or know if it is possible to add) a second monitor panel outside just to see the black and grey tank levels when back flushing, emptying, etc .

probably since they are just LED's
Since you are in a mod mood, take a look at the SeeLevel system. It's way more accurate than the Winnebago panel, and it absolutely does have a remote option.
