All that talk of deviled eggs in the Hard Boiling Fresh Eggs thread got me thinking, what's your Deviled Egg Recipe?

My mothers deviled eggs always tasted the best and people love them and it is just simply mixing the yolks with Miracle Whip and salt & pepper to taste then sprinkle a little paprika over the top.

I hadn't heard of Durkee's, so I looked it up the ingredients:

Soybean Oil, Water, Distilled Vinegar, Sugar, Mustard, Salt, Whole Egg Solids, Food Starch-Modified, Xanthan Gum, Spice Extractives. Contains Egg.

Haven't seen that in years! Didn't know they still made it. My mom used it all the time and loved it.

The one comment about piping the puree, best trick I ever learned, makes the filling process just right.

It's amazing the number of recipes and preferences in what is a simple dish. As I stated I prefer the simple one, probably because the is what I grew up with, but I'm sure the others are tasty.

My Grandmother always topped her deviled eggs with a seedless grape.......sounds weird but delicious.

I use The Joy of Cooking recipe:

4 hard boiled eggs

add to yolks:
2 Tbls. mayo
2 tsp. minced fresh herbs - parsley, chives, tarragon, basil - I like parsley
1-2 tsp. Dijon mustard to taste - we also like yellow mustard
1 tsp. vinegar (any kind)
1/8 tsp. Worcestershire sauce
1/8 tsp. pepper

I also use a stick blender to puree the filling. The two secrets are the Worcestershire sauce and the vinegar. And piping the puree (I just use a zip loc bag with the corner cut). And I love the fresh herbs. It makes it look very appetizing when you have the green parsley mixed into the yellow egg.

I use the mayo/mustard, salt/pepper combo but I do one more thing. I put the yolks in the food processor and process them until they are very fine. This makes a very smooth mixture to pipe into the whites. Oh, and top with paprika. I started doing it this way when my arthritis make it difficult for me to mix them up. The family loves them.

Very simple and there are never any left at our family get togethers. To the yolks, add to taste:

DILL pickle relish
Onion powder
Miracle Whip
Top with paprika

Miracle Whip is the key. No question.
