All that talk of deviled eggs in the Hard Boiling Fresh Eggs thread got me thinking, what's your Deviled Egg Recipe?

I add to mashed yolks:
Finely diced celery
Finely diced onions
Coleman's dry mustard
Mayo
Mix altogether and stuff eggs. Then sprinkle with Paprika.

You should try any classic recipe and fold in some finely diced green olives just before stuffing the whites. Its way better than putting an olive slice on the top. You could even put a splash or two of the liquid from the olive jar in there too.

If going the sweet pickle route, try a couple splashes of the pickling liquid in that too. The juice in either recipe throws it over the top.

I use this trick with my macaroni salad for the sweet pickle. The diced sweet pickles are good, but the pickling juice makes that flavor pop.

I'm going to try the jalapeรฑos. That sounds like a good combo.

Deviled eggs are not deviled unless you put in apple cider vinegar. That is what makes them taste so good. All the other ones do sound good also.

I've got many variations.
The simplistic is Hellmans mayo with some dry ranch powder, dill, onion powder. That's the kids favorite
I also like to add bleu cheese crumbles and crumbled bacon
For healthier, I replace half of the yolks with purรฉed white beans and proceed with lite mayo (nobody can tell!)
Or use thousand island dressing instead of mayo- also very good
Cheesy eggs- replace half mayo with a softened pimento cheese or laughing cow light
Curried eggs- mayo, curry powder, celery seed, coriander, diced celery, grated onion

I never have been a fan of mustard in deviled eggs. Or in potato salad, for that matter. Matter of personal taste, I guess.

To the yolk I add, mayo(Best Foods of course). salt &pepper, yellow mustard(French's), and pickle relish. Mix to consistancy to put in pastry bag and inject in yolk cavity. I like this and the DW(she who must be obeyed)loves it along with the part of the family that eats eggs.

I think minced bacon would be really good and I will try that the next time I make them. The DGS might even eat them if there is bacon in them. Thanks for the tip.

Lots of good recipes above and I use the basic mayo/mustard combo with some spice variations. I like to put sliced nacho jalapenos or sliced peperoncinis on the top. For a real kick, add a dash of Tabasco. Lots of good ways to make 'em.

I sometimes added bacos, nice smokey flavor without the grease and the hassle. 20 cals for 1 tbls.

Ours is a little mayo, lots of yellow mustard, apple cider vinegar ( to taste, we like it tangy) salt and pepper. Mash all of it together with the yokes and then stuff the shells.

Mash the yolks and add a little mayonnaise, mustard, and chopped sweet pickles (not pickle relish), a pinch of salt. Spoon into egg white halves and sprinkle with paprika.

Ingredients:

One dozen Hard boiled eggs.

Spicy brown mustard as needed.

One seeded jalapeรฑo, finely chopped.

Paprika.

Assembly:

Cut shelled eggs in half lengthwise.

Remove yokes from whites.

In mixing bowl, crush yokes with a fork and mix in the mustard and jalapeรฑo.

Put yoke mixture in a pastry bag with a "star tip" and inject into into the whites.

Dust with paprika.

Serve.
