Made these last night and they were so good and easy to make.

Easy Beef Enchiladas

1 lb ground beef
1 diced Jalapeño (for heat) Optional
1/2 cup chopped onion
2 cups shredded cheddar cheese (I like the Mexican Blend Cheese)
1 (20 ounce) can enchilada sauce
8 8" flour tortillas
Sour Cream/ Salsa Optional

Brown meat, onions and Jalapeño in large skillet.
Add 1 cup enchilada sauce and 1 cup cheese.
Mix well.
Put filling along center of each tortilla.
Roll up and place seam side down in a 9x13 pan.
Pour remaining sauce over.
Sprinkle remaining cheese over.
Bake at 350 F degrees for about 30 minutes till cheese is bubbly.
Top with Sour Cream or Salsa!

Note: We did add refried beans in the mixture.

These are so good and easy, I don't know why I don't make them more often. I also love the casserole style of the enchiladas. Same principle but layer like a lasagna.

Yes, that is a half cup of onion. Well, it serves eight if you are not a pig, like me. 🙂
