Favorite summer recipes

This section has been a bit quiet lately so thought I'd ask for your favorite summer time treat. One of mine is Pineapple Sorbet.
Take a can of pineapple, the 20 oz size and pour it into a flat pan and freeze until solid. When its frozen solid, remove from the freezer and let it sit for about 10 minutes and with a kitchen knife break it up and process until smooth and creamy. Once you get it blended you can add a couple tablespoons coconut milk or cream. Quick, cool and yummy. I have often thought of adding a half banana to it but haven't tried it.

Hot Hummus Salad I love easy healthy recipes and this is also a summer favorite. I heat some hummus in a bowl, homemade or store bought, doesn't matter, and once warm I make a salad of any chopped veggies, cherry tomatoes, cucumbers, celery, red peppers and sprinkle them with white wine vinegar. (it really makes the dish but any vinegar will do) and then eat with corn or pita chips.

Quinoa with a tangy citrus or vinaigrette dressing and whatever fresh or grilled vegetables are on hand, diced and tossed in.

For the kids out there, I make "Banana Boats".

Peel a banana and slice lengthwise. In the cut place marshmallow and chocolate, alternating along the whole length. Wrap in foil, and place next to the fire where it can be warmed making the chocolate and marshmallow melt. Usually about 10min.

Unwrap and enjoy, using a spoon.

The banana gets a little softer, as mentioned the chocolate and marshmallow melt making a gooey mess. Think s'more without the graham cracker.
