I have a problem with hard boiled eggs........

.......not cooking or eating them, but PEELING them. The shell comes off with pieces of egg attached. I used to be able to peel them easily, but I guess I forgot.

I used to take them out of the pan when done; crack the shells all over and add cold water and leave them alone for awhile. Worked fine...I thought. No more. What method do you use to get an easy peeled HBE?

Does the age of the egg have anything to do with it? There is a thin membrane between the shell and egg. Is this the culprit ?

Half teaspoon of baking powder in water and boil. Easy to peel

I always add a dash of white vinegar in my water, bring water to a boil, cover and let sit 20 min. then rinse with cold water and the shells peel right off no problems.

Just tried something new today. Steamed them in a vegetable steamer. 15 minutes, then cold water. Peeled easy. Easiest way to hard boil eggs I've ever tried.

Old eggs. We were stationed in Japan and I found that if I bought eggs shipped from the states, they would peel easily, but if I purchased eggs from Japan they wouldn't peel at all or make a mess. So now if I need hard boiled eggs, I buy them about a week before hand and let them sit out for awhile. Never have a problem peeling eggs.

Pressure cooking them works every time. Use low pressure. When comes to pressure cook for 6 minutes and allow pressure to release naturally. As soon as pressure is down, remove and plunge into ice cold water. Doesn't matter if eggs are fresh or old. No green yolks, either.

i watches a video on a cooking web site that showed taking the egg and placing it to a jar and filling the jar with water to just cover the egg then put the lid on and shake it and the shell cracked and came right off

That's basically what I've been using for a couple years and it works perfectly every time. I've tried all the tips above over the years and nothing has worked as well as this:

Got the info off youtube: Add cold eggs to BOILING water with a ladle. Boil 13 minutes exactly. Remove and run under cold water for about a minute, then put eggs in an ice bath for 5 minutes. Take out and peel immediately. The shells just fall off most of the time.

Old eggs vs. new eggs...when I want them, I want them now. Every since we started using a $15 egg cooker, I have had zero problems peeling eggs. That $15 saved a lot of frustration.

Stop and Shop, A+P, Pathmark and Food Emporium supermarkets also carry them in the NE. They come 2 to a pack and are located in the dairy aisle. Useful when I'm low on gas fuel or just a lazy lima bean. Oh! And so far I've never bought any that were over cooked ie. have a sulphurous green ring.

..just place them on the rack and turn on the oven.. Peels nicely too.

Temperature and timing has to be just right, or you end up with a bit of shell inside the oven. Done this a couple of times, but went back to the water method.

We start the eggs in a large pan of cold water, bring it to a rapid boil, turn off the heat and let the eggs sit in the hot water for 13 minutes. Pour off the hot water, run under cold water until cool, and then add ice to the water. I then roll the cool eggs all over on the counter and peel.

This works great on eggs from the store, but can be less effective for my son's farm fresh eggs.

Note to Self: I used to cook eggs in boiling water for 12 minutes. I was working in the basement and did not hear the timer. When the pan boils dry, the eggs explode. . . on the walls, ceiling, light fixtures, cabinet fronts, and range exhaust hood. We are still finding bits around.

I add the eggs to boiling water and boil for 12 minutes. I have ice water ready and put them in it as soon as the 12 minutes is up. I give them 5 or 10 minutes to cool and then roll them to crack the shells and pull the shells of. This has always worked for me.

1.2 teaspoon baking soda in the boiling water and they come off easily

Older eyes are more dehydrated due to the porous nature of the shell. I get them to a rolling boil and then turn off the heat and cover and let them sit for 15 min. Then plunge into cold water. Old eggs - easy peel.
