Ok so is this correct;
say my RV has a 30amp service and I want to wire an outlet in my pole barn. I just use a STANDARD 30amp single pole 110 breaker and run 10 gage romex to the outlet ?

Now lets say I have a 50amp service, I assume I can run that on the 30 amp service but only one side of the line on the RV will be hot ?

Now lets say I want to run a 50amp outlet ....I assume I have to use a 220 50 amp double pole breaker so that it feeds power to both sides ?

And would I need 8gage wire ?

When you use the 30/50A adapter then all 3 hot legs are connected so that you have 120V everywhere in the 50A RV. But you will be limited to 30A total draw.

Yes dual 50A CB. 50A is 120/240V 50A 4 wire single phase just like a home stove. Use 6 gauge wire. 50A effectively gives you 2x 120V 50A circuits or 100A total as it's a rare RV that has 240V appliances.

Look at wiring diagram for both. That’ll help understand it.

Yes.

No, the adapter will connect both sides of the RV to the single pole supply. Everything will work to the limit of 30 amps.

Yes.

#8 is only good for maybe 10'.... better to use #6.

You might consider 8 GA for 30 amp if it's a long run.that's what I used for a 70 foot run

I think you have it figured out correctly. There are several posts about that wiring with good diagrams attached. Try searching it out.
