We are planning a UP trip this summer that will include a stay at Black River Harbor CG outside of Ironwood. It's a "no hook-up" campground, we stayed there 3 or 4 years ago, right on the lake. It was gorgeous and we're looking forward to going back to that general area. That whole area is beautiful.

The North Shore State Parks are very popular and are frequently full on every weekend (and some weekdays) during the summer. Some may consider the North Shore remote, but it is an extremely popular destination for folks from Minneapolis and St. Paul (and elsewhere).
We camped at Lambs about 15 years ago, and it was OK. Burlington Bay has just expanded and is right on the lake in Two Harbors. The new portion of the campground is pretty much a terraced open area, but you do have a view of the lake. As someone else has posted, Grand Marais CG is also on the lake and right in town with nice views.
There are many USFS campgrounds farther inland from Lake Superior, but these generally don't have electrical or water hookups, although water is available from wells. Almost all are located on smaller lakes, often with good fishing. They almost never fill up completely. A few USFS campgrounds on the Tofte Ranger District are even available free of charge.
