Well for those who are enthusiastic about BBQ, Salt Lick in Austin TX. They have an open pit.... Best I think in the world.
Been there, done that one also. The original is in Driftwood,TX.Yes it is good for a large restaurant. They can seat about 700 at a time. Some of the best Q can be found in the road side stands in Texas.

I was really disappointed in a road trip that I made the other day! I went to Port Townsend to eat at Dos Okies BBQ and they were shut down.
They have been gone for 3-4 years now. Went there number of times and it was the best Q this side of Texas. I still have my "Jeet Yet" t-shirt and only wear it on special occasions.
