Mini loaf breads from cake mixes

I am thinking of making some mini loaf breads for my co-workers for Christmas (there are 20 of them). I have seen some recipes for making loaves like banana nut and poppy seed from cake mixes.

Wondering if any of you have recipes to share and also how many mini loaves can I get from one box of cake mix adding extra ingredients?

Thanks.

I'm glad you baked and your goodies were well received ๐Ÿ™‚ A co-worker brought in a platter of cookies her and her family baked. We really enjoyed them!

I appreciate all the nice words and recipes. I did make the mini loaves and gave them as gifts to my co-workers--20 in all! I had 5 different kinds, and as I told someone in a PM, the easiest and one of the best was a box of spice cake mix and a can of pure pumpkin--that's all.

Well, Go Dogs, that may be your opinion and a previous poster's opinion, but not mine and others. In fact, most people who buy my bake goods ask how they can purchase more. If it was true they were purchasing just to throw away, I would know about it very quickly. Besides, most of the people I know would just donate to the church. They can't afford to buy something and toss it. I sure wouldn't.

I think 5 of the minis is about right for one box of mix. That was your question, wasn't it

Here's a quote about bake sales from an above post:" I don't buy baked goods at a bake sale because I don't know where they have come from, I just give them money."
A very popular shared opinion. I really maintain that cooking and baking for close family/friends is one thing. Strangers and casual acquaintances is another thing. According to my other forum, if people know that you have pets or kids-it frequently goes in the trash. And it's not just 'cooties'! DH had a co-worker that had to have EMTs called to work for an anaphylactic reaction to some homemade thing he ate. This guy knew he was allergic to nuts, he asked the guy that brought it if it had nuts, 'No' was the reply and boom.

I can't believe the response to your opening post, LindaAnn. I've been making fruit breads as gifts to friends for more years than I can remember. When I first went to the church in our community, they had a bake sale and I made my fruit breads and they were sold as quickly as they were put out. Sure made an increase of profit for the bake sales, too. I couldn't make enough. Now I'm even being introduced as "our baker". I do diabetic and nut free so everyone has something to buy and buy they do. I haven't done gluten free yet, but as far as I know, no one has complained. Now the organizers are asking me to make some of my regular breads and rolls. Make your breads for gifts to you co-workers and put all your love into it. I have a lot of tried and true recipes - everything from Hawaiian Banana Bread to Angela Lansbury's Date Nut Bread and one of the very best apple breads you'll ever find. If you want any of my recipes, let me know and I'll post or send them to you.

I love to both get and give food stuffs for gifts and while the poster above might feel that folks toss stuff, I think that is just his opinion. When I worked Disaster Services, folks would bring in homemade foodstuffs at shelters. Health Department wouldn't let us give them out to the shelter residents and that was find, they got the Oreo's and we got the homemade ones and we all knew we got the best of that bargain.

I kind of feel sorry for folks who won't eat others food because they are afraid of folks' cooties. Really sad what they are missing.

I'm really surprised at the reaction you received. If you work with these people they know you, I would think it's a nice gift. Better then a stupid cologne or bath set from Walmart picked up last minute or re-gifted with no thought. Have any of these people eaten fast food before? Go in the kitchen of your favorite restaurant and see what goes on. You wouldn't eat out again! I know my friends and co-workers well, that I know one doesn't like chocolate, one can't have nuts etc. My daughter has a child who she is nursing and has allergies she is on the MSPI diet for the child. But the rest of her family is fine. She would simply say thank you and give it to guests or other family members. She doesn't expect everyone to know what she can have and not. I don't buy baked goods at a bake sale because I don't know where they have come from, I just give them money.
I had a friend give me lots of zucchini this summer that I froze from her garden. I'm making her zucchini bread. Go ahead and bake. You don't have to know if they throw it out or not. Same if you gave them a store bought gift you never know if they re-gift or not.
Zucchini Bread Recipe
3 eggs
1 1/2 c. sugar
1 c. oil
2 c. grated zucchini
3 c. flour
1 t. soda
1 t. salt
3 t. cinnamon
1/4 t. baking powder
1/2 cu. nuts.
Beat 3 eggs well. add sugar, oil and zucchini. combine dry ingredients and add to the mixture. Mix together flour, soda, salt, cinnamon and baking powder. Add vanilla and nuts. Bake at 325 degrees for 1 hour. Makes 2 loves. or use mini loaves and less time. This recipe I use all the time uses less sugar then most. Freezes well.

Like another poster said it's just as easy to make bread from scratch.
I have a bunch of recipes called "Cookies in a Jar" They make nice gifts. Just type in Cookies in a Jar.
I wanna go where I haven't been, but still wanna see what I've seen again!
