Pimento Cheese Spread, recipe please

My first Mother-in-law taught me to make real southern pimento cheese and brunswick stew in 1950. If you ever try the real thing you won't ever touch the store bought stuff again.

Pimento Cheese
16 ounces of sharp cheddar cheese (Kraft Extra Sharp Cracker Barrel)
14 oz. chopped pimento peppers. (2 7 oz. jars)
Dash of hot sauce to taste.
1/2 cup (more or less) mayo - just enough to make the mixture spread easily.

grate the cheese and mix all well.

I'm in that camp. Costco sells a big tub, can't recall the name. As good as any I've had or could make - and by the time you buy the cheese and pimentos, it costs about the same.

My mother used to run a block of cheddar cheese and a can of pimentos through the meat grinder(I got to crank it), then added Miracle Whip till it looked right. Fed us a lot of it, cause it was pretty cheap back then.

Ingredients
1 (3-ounce) package cream cheese, room temperature.
1 cup grated sharp cheddar.
1 cup grated Monterey Jack.
1/2 cup mayonnaise.
1/2 teaspoon random favorite seasoning. Mine is Tony Chachere's.
2 to 3 tablespoons pimentos, smashed.
1 teaspoon grated onion.
Cracked black pepper.
