Roasted or grilled cabbage steaks

1 (approx 2lb) head of organic green cabbage, cut into 1 inch thick slices
1.5 tablespoons olive oil
2 to 3 large garlic cloves, smashed

kosher salt
freshly ground black pepper
spray olive oil or non-stick cooking spray

Preheat oven to 400F and spray a baking sheet with non-stick cooking spray. Pull outer leaf off cabbage (it’s usually dirty and nasty looking), cut cabbage from top to bottom (bottom being root) into 1? thick slices.

Rub both sides of cabbage with smashed garlic.

use a pastry brush to evenly spread the olive oil over both sides of the cabbage slices.

Finally, sprinkle each side with a bit of kosher salt and freshly cracked black pepper.

Roast on the middle rack for 30 minutes. Carefully flip the cabbage steaks and roast for an additional 30 minutes until edges are brown and crispy. Serve hot and Enjoy!

I can't think why you couldn't use the grill for this if you want.
and I'm thinking that garlic flavored olive oil would work ok, too.

I happen to have about 12 heads of cabbage
in the garden waiting and they are about
to get frozen.

Sounds good. We do a similar one with onion. Not as thick and right to the edge of burnt is how we like ours. Good eats.

We make a recipe very similar to that but it has slices of bacon on the cabbage. It's about the only way I like cabbage. Great recipe.

Have done it in a cast iron dutch oven on the campfire. Took a total of 30 min (15 each side) and came out great. It's good sprinkled with ginger instead of garlic too.

Sounds like it would be good with some crumbled bacon or sneaking some bacon fat into the roasting. I wonder if someone created this from a Brussels sprouts recipe?
