Valentine's Day Prime Rib

My wife suggested that we stay in tonight to avoid the madness at restaurants, so, I've seasoned a small prime rib that I had in the freezer.

Fresh green beans and twice baked potatoes will round out the main meal. I stopped by the bakery yesterday and got a piece of Tuxedo cake for us to share for dessert.

Working on the taters while the PR is doing its thing.

Baked, mashed and smoked

Finish pictures and think they might speak for themselves:

Meat:

Separate rib plate from roast

Rig: 2018 Big Country 3155 RLK
Boat: 21' North River Seahawk

The prime rib is mighty tempting.

But the potatoes almost stole the show. Cheese, potatoes and smoke are a great combination.

Those look good too. But ever since our trip to Great Britain we've been hooked on chips served with malt vinegar and salt alongside our prime rib. Deep fried wedges of potatoes with salt and vinegar hits just the right counterpoint to the smoky rare beef.

Everyone's different.

So, Dave, do you do all the cooking in your house? You make some pretty good meals!

Thanks. Actually, my wife and I are good team. She can cook. She doesn't go as extreme as I tend to do but we share the cooking . She also takes credit for cooking a couple nights a week warming up my leftovers. Lol!

No person is completely worthless ... one can always serve as a bad example.

No problem. I rubbed the roast with olive oil and then coated with garlic powder, onion powder, kosher salt and pepper. I smoked it at 235 degrees for 3 hours, internal temp of 135. Wrapped in foil and let it rest for 15 - 20 minutes.

Any leftovers Dave? I would consider driving back to Sac for that Prime Rib! It might be a bit old by then. It is only about 3K miles from here.
