Weight Watcher Recipes

Let's get a new thread with Weight Watcher recipes only. Be sure to list points/and or calories so we can all keep track. I'll start off with this one.

Baked Coconut Shrimp

1 1/2 pounds Shrimp - Extra large, defrosted, shelled and deveined, rinsed and patted dry
1/3 cup cornstarch
1/2 teaspoon ground red pepper
salt - dash
1 tablespoon honey
1 tablespoon lime juice - fresh squeezed
1/3 cup egg whites
3/4 cup coconut

Preheat oven to 425ยฐ F. Lightly spray a large baking sheet with butter flavored cooking spray.
In a small bowl combine cornstarch, pepper & salt. In a small microwave safe dish heat up honey approx. 30-45 seconds
Add lime juice to honey and stir. Slowly add in egg whites and continue to stir.
Place coconut in a thin layer on a pie plate or flat dish.
Take each shrimp and first dip into cornstarch mixture, then in egg white mixture and finally roll in the coconut.
Place on the baking sheet and lightly spray with butter pam. Bake 10-15 minutes or until shrimp is pink and the coconut is lightly toasted.


Per Serving (excluding unknown items): 230 Calories; 10g Fat (42.3% calories from fat); trace Protein; 31g Carbohydrate; 2g Dietary Fiber; 0mg Cholesterol; 96mg Sodium. Exchanges: 1 Grain (Starch); 1/2 Other Carbohydrates.


WW Points: 3 servings at 5-P each OR 2 servings at 7-p EACH

I fix a sugar free peach jam with a liberal amount of grated horseradish to use as a dipping sauce. nAdd points accordingly.

I can see how that would work as well. I hadn't really thought about the crockpot but it would certainly serve this dish. I have vowed never again to use my crockpot with chicken though and sometimes I substitute chicken for the pork in this. My crockpot makes chicken almost powdery dry and I really don't like the texture, pork would be fine though.

I have served this over brown rice and also over egg noodles. (These have to be added to the point count) I think adding a potato and perhaps some baby carrots might turn it into a very flavorful stew. Enjoy.

You both have great loses for the first week. If you don't like the Points Plus system just follow the old system of points. I know many old recipes don't have the complete nutrition information you need for points plus.

You can figure nutrition the old fashion way from the label on the box/can of food item you use. Add em up and divide by the servings. You also can buy a paper back book that will give you the nutrition. The Calorie King is a good one. 300 pages of info. including info on fast food chains and restaurants

Okay. We are officially back on the diet. Been on for two weeks. I have lost 9.5 and DW has lost 7. I must say this new PointsPlus thing is killing us. All our recipes have to be redone and re-pointed and they are all higher. Things that were on the edge before are now off limits and the real killer is that some free stuff now costs us! In re-figuring we are finding many instances of one Tablespoon being one point, but two Tablespoons is three! I know they gave us more points but in my opinion they have taken more than they have given. No matter, we are losing and that is what counts. I have gone back over many of the recipes posted in this thread and most of them are still viable but just need re-figuring. Any one else have thoughts on PointsPlus?

Oh, please stay safe! And I don't mind cleaning when someone else cooks. My DH is also a wonderful cook. I love men who know their way around a kitchen. Thank you for starting this post I have copied several receipes. Thanks again and please stay safe.

The rule in our house is if I cook you clean! Not so sure you want to come here right now. We are in Middleboro Mass. and looking at hurricane Irene bearing down on us.

Vanilla Ginger Smoothie


I just tried to make a shake with Weight Watchers French Vanilla smoothie mix. I used nonfat milk and ice. It was too thick. I grabbed a can of ginger ale (diet) to thin it out, ended up putting the whole thing in. WOW, is it ever good! The ginger ale gives it just the kick it needs.

I made this and it was so good. I did use 1 can tomatoes and 1 can rotel and I added a little water because it was a little thicker than I like. And the next time I make it (which will be soon!), I think I will put the can of tomatoes in the blender to try that consistency. But the taste is really good and I love easy, simple recipes!

Haven't been on here for a while so had to go thru all 22 pages to see if this recipe was here. Don't remember where I got it but it is good and easy. Sorry don't have the points for it.

Weight Watchers Skillet Lasagna

1 skinless, boneless chicken breast,ground, or low fat ground beef
1 Tbsp olive oil, not needed if using ground beef
1 small onion, chopped
3 cloves of minced garlic
1 14 oz. can of diced tomatoes, un-drained
1 1/4 cup water
1 8 ounce can tomato sauce, I like Contadina, less carbs
2 teaspoons dried basil leaves
1 Tbsp Splenda
1 Teaspoon salt, I leave it out, up to you
2 1/2 cups broken up whole wheat pasta, any type. I like to use the
dumpling type
1 cup fat-free cottage cheese or ff ricotta cheese
1/4 cup grated Parmesan cheese, fat free if you can find it
Dash basil, pepper, optional
1 egg, could use egg substitute
Shredded fat-free mozzarella cheese

In large skillet, brown chicken, in olive oil, or ground beef with onions and garlic . Add tomatoes, water, tomato sauce, Splenda, basil, and salt, if using. Mix well.

Stir in uncooked pasta. Bring to a boil, stirring occasionally. Reduce heat; cover, simmer for 20 minutes or till pasta is tender, stirring once.

Combine cottage cheese and Parmesan cheese with egg. Sprinkle in basil and pepper to taste, if desired. Drop cheese mixture by rounded tablespoons onto pasta mixture. Cover and cook for 5 minutes. Sprinkle with shredded mozzarella, if desired and microwave for 1 minute till cheese melts. I find if you sprinkle cheese on top then put lid back on for just a minute it melts just fine!

Note: Next time I make this I'm going to try adding half a bag of baby spinach stirred into the mixture before the main cooking time. I love veggie lasagna so feel this will work. No idea of what it will do to the point count. This recipe is suppose to be a from the Core program.

SteveRuff, I have just noticed these Weight Watcher posts. Now I am going to go through ALL 22 pages and print some of them! My daughter is on a weight-loss program called NexSlim, which is basically watching calorie/fat/carbs and she is working through a doctor. I think she could use a lot of the recipes here--two that really jumped out were the Taco Soup and the Bubble Up Pizza.
