So, all the other wires just wire into the 7 pin standard towing harness.

Coming to doing the wiring, the Ford 10ga wire is more than capable carrying 30 amp the relay/fuse in F350 supply.
So are you planning to rewire the truck to make new, higher amp circuit for your camper?
Otherwise you are wasting your time for lot of BS
Charging with more than 30 amp can damage your camper batteries BTW
