I'd take 15 south to the 17 then to the 59 east to Fredonia then north on the 89A to Kanab then east on the 89 via Lake Powell to Flagstaff. Google Maps says it's 308 miles and it's friendly to your 5er.
One thing to do is get a Motor Carrier's Atlas and compare the desired route with the Atlas to see if it's 18-wheeler friendly.
Agree with the above route. On a map 59 will be Utah and it becomes 389 in Arizona to Fredonia. From Fredonia you can take either 89A which will bring you to 89 or 89 through Page, AZ. 89A will have a steep downhill - not long, and many RVers do it but I just wanted to alert you. 89 all the way is easier.
89 south will take you right into Flagstaff.
Are you planning to visit anything along your way? There's Zion and coming from the west on Hwy 9 is flat - no tunnel and steep road as it is driving through the park and heading east.
You could also work in Grand Canyon North Rim from Fredonia. There's DeMotte national forest campground at the Canyon entrance and lots of good boondocking on national forest land at that point. The park also has a dry campground.
At Page, AZ you could take a tour of Antelope Canyon and also view Lake Powell.
This is all a gorgeous area and scenic drives.
Also, if you wanted to visit Bryce Nat'l Park from I-15, the best way would be to pick up UT20 at I-15 at Circleville. This would take you to Hwy 89 then you'd go south to Hwy 12 east to Bryce.
So much to do in this whole area. Have a great trip!
