Some Florida State parks allow primitive tent camping, but not RV boondocking. Camping on a beach is unheard of, you can camp near a beach. Anastasia SP for example. But it will be in their developed CG.

Just did a search on GOOGLE using 'State Parks around Daytona Beach, FL' also did a search for 'Boondocking around Daytona Beach, FL' and got almost the same response...

Lots of hits... Don't know if they qualify for boondocking or not haha...

I guess you could elect to NOT use the hookups if available...

Boondocking around Daytona Bch. is about the same as it is in Raleigh. Two SPs relatively close are Tomoka SP, north of Ormond Bch and further north in Flagler Bch. at Gamble Rogers.

Don't park too close to the water. The tide will come in and you will need to be towed out of the ocean. ๐Ÿ˜ฎ Don't ask me how I know this:R
other than that I have no good advice

Nearest I know of would be the Ocala National Forest which is miles inland. Nothing near the coast that I've ever heard of.
