Havenโt taken the panels off under yet as we just got home.
What is the availability of me getting the same tank.
Is building one out of aluminum a good option? Perhaps I good build a larger one??

Copper is not a good choice for some water chemistry. I know itโs not allowed here for houses on well water, as the water will corrode it pretty quickly.
I can remember when trucking industry used copper for air lines; From that experience I would not want to use for water on a vehicle.
And can't understand why use for propane lines.

Best bet would be to replace it with pex line. It rigid yet flexible.

I know Iโll be smarter when I have the panels off.
My question was about using aluminum to build another one. I thought perhaps that would be ok since the hot water tanks are aluminum.
Plus the benefit of having a bigger one.

This is good advice. You don't know that the problem is the tank itself.
Problem could be a fitting or piping leak.
