If you're not hearing that fan, which on every F53 I've been around is very noticeable, then you want to get in asap to have it checked out. Not all RV dealerships will service the chassis of a Ford but they can direct you to a shop that can.
My gauge never really budged on the way home, even when the fan kicked in. But like you I slowed down and took it easy, most the passes on Hwy 97 had passing lanes so I just kicked back and went along with it.
Do you have an external temp device or does you're unit show actual temps not just the gauge?

Yesterday, while traveling west towards Boise the engine temp spiked to over 142f. Outside temp was 95-100f. We were traveling 65mph. I have only seen this happen once before with similar ~100f temps. The test of the trip we did lots of mountains but never saw these extreme engine temps.
When we slowed to 55 mph the temp was reasonable. If the outside temp is below 95f then we see no crazy engine temperature spikes.
What have any of your seen with engine temps during hot weather? What about those of your with even bigger f53?
Overall, I'm very happy with the Ford v10.
