Need a new idea for an New Years Appetizer

Heading off to a New Years celebration and I am looking for a new appetizer to take.

Any ideas out there?

Steve, I'm seeing 7 + cups of ingredients for 6 english muffins. Is that really the amount of filling per muffin?

Devonshire Tidbits

6 English muffins
1 1/2 c. green onions, finely chopped
1 1/2 c. black & green olives, finely chopped
1 tsp. salt
1 tsp. black pepper
1 c. good quality mayonnaise
3 c. sharp Cheddar cheese, shredded

1. Split English muffins into halves.

2. Mix ingredients in order given and spread thickly on muffin halves.

3. Cut each muffin half into 4 pie shaped pieces. Freeze on cookie sheet until hard. Store in plastic bag.

4. Bake frozen in 350 degree oven for 10-15 minutes.

The great thing about these is that you bake them frozen and you can always keep them on hand in the freezer for unexpected company. A variation can be made by substituting crab meat for the olives.

Mini muffin pan, your favorite corn bread recipe and some sliced up hot dogs. You might want to eat a pan as testers before sharing them with anyone.

Baked onion dip:
3 (yes 3) 8oz creme cheese
24 oz of FROZEN chopped onion drain WELL (you can freeze fresh to soften)
1/2 cup mayo
2 cups parmesan
soften cheese in processor till fluffy, add rest and mix well.
Bake at 425 about 30 min or until brown.

I made them for New Years as well. I don't ever measure the dough, but I use as little dough as possible. I got 84 out of my single batch. I freeze part and when we want a snack, I take a few out and bake them. I, too, use an 8 oz pack and make DH shred it for me. The more cheese you use, the better. I have often thought about just rolling out the dough and cutting it and baking it as crackers. It is a bit labor intensive, but can be done ahead and frozen. I have done it so many years, I can crank them out pretty quickly.

I made the Olive Cheese balls yesterday. I used exact measurements for everything in the recipe. I was careful to use only 1 tsp. of dough for each olive, and instead of 48, I got 65 of those little morsels! Perhaps the difference was because I bought an 8 oz. block of very sharp cheddar and shredded it myself. Store-packaged cheese may say it contains 2 cups of shredded cheddar, but I think it's less than 8 oz. And that must have made the difference in volume. They are good, but very labor intensive.

Easiest ever meatballs

One bag of 1/2 oz frozen meatballs
One large bottle of Bullseye bbq sauce

Throw it all in crockpot, turn on high until cover is warm turn to low for 3 or more hours, if you need them quick high for 1.5-2 hours.

Never bring any home always one of the first things gone.

Bacon wrapped Crackers
1/2 tsp Red Pepper flakes
1 tsp ranch dressing mix
1/2 tsp garlic powder
1 tsp Parmesan cheese
1/3 cup oil
mix in 1 gal zip bag and ad 1 box club crackers
toss to cover crackers with seasoning/oil
place in fridge overnight to absorb flavors and oil into crackers

1 package of thin sliced bacon cut strips in half
place 1/2 tsp of asiago/romano cheese on cracker wrap half slice of bacon around cracker to hold cheese in place
place crackers on rack and cookie sheet
bake at 400 degrees until bacon is cooked to till almost crispy.
place on paper towels to absorb drippings
stand back and watch how fast they are devoured!

Artichoke Dip
ARTICHOKE DIP

1 Lg Can Artichoke Hearts
1 Cup Mayonnaise
1/2 Cup Parmesan cheese
1 sm Can diced green chilies

Rinse Artichoke Hearts and chop up hearts
Add remaining ingredients and mix
Put in 8 X 8 Casserole
Bake at 350 degrees for 25 min. or until slightly brown
Serve hot with Frito chips or Tortilla chips

Best served hot and I prefer Frito chips, YUMMY

Clam Casino Dip (double for a larger crowd)

2 cans minced clams - drain ONLY ONE can
1 stalk celery diced
1/4 onion diced
7 strips of bacon (chopped and NOT cooked)
1/2 pepper diced
about 1/2 sleeve of Ritz crackers, crushed
1/4 stick butter, melted

In casserole dish, combine all ingredients. Bake at 350 for about 30 min until bubbly. Serve with Ritz crackers.


Easy Sweet and Sour Meatballs

50 or so of store-bought meatballs, thawed
1 -1/2 cups grape jelly
1 bottle chili sauce

Simmer on stove or in crock pot on low for 2 hours. Serve.

Reuben Dip:
1/3 lb corned beef - chopped up
1/2 lb big eye Swiss cheese slices-chopped up
8 oz cream cheese (cut into chunks)
1/2 cup Thousand Island dressing
8 oz can sauerkraut, drain well

Heat together in small crockpot for 2 to 4 hours then stir up. Serve with cocktail rye bread. I get meat and cheese from deli case.
