The apples pictured are an interesting twist for breakfast.

Since I'm a Yankee I make the gravy slightly differently in that I prefer bigger pieces of sausage and use some heavy cream in addition to the milk. The bigger pieces of sausage have a nice "chew." Also looking for a little spicy, and sage flavor out of it. For me it's a once or twice a year breakfast so I'm not skimping on calories or expense.

We frequently make some of the best vegetable beef soup with barley. This takes about 15 minutes to put together

6 ounce sirloin steak, cut into cubes
1 teaspoon aus juiz base
1 cup water
1 can mixed vegetables
brown gravy packet
1/4 cup barley
1/4 cup chopped onions
1/4 cup chopped celery

brown the steak, onions, and celery in oil or butter
add vegetables
add water
add aus juiz base
bring to a boil
add barley and cook for 10 minutes on low boil
mix 1/2 of gravy mix with water, add to the beef/vegetable mix
let it sit for a couple of minutes before eating

Baked Chicken w/stuffing


1 whole frier, rinsed with water inside & out.

1 medium onion, medium chopped

1 can Italian croutons

Pepper

garlic salt

Olive oil

Stick to close up the bird.

Aluminum foil to cover bird if using open grill


Directions


Coat bird with olive oil, inside & out

Sprinkle with pepper & garlic salt, inside & out

Stuff with alternate handfuls of croutons & onion

Close up bird and bake, medium heat, till leg joint pops with ease

Foil Dinners: serves 4.
1 lb ground beef
1 large yellow onion coarsely chopped.
1 package baby carrots.
1 green or red pepper seeded and coarsely chopped.
3-4 medium potatoes, precook 3 minutes in microwave, cool, slice.
Pam or preferrably Butter spritz.
Heavy duty foil.

Make 4 patties of beef. Spray or spritz approx. 18" sq pc of foil. place patty in center, add 1/4 of remaining ingredients, add salt, pepper or spice(s) of choice. spray or spritz top and seal foil into a packet.

place on grill or grate over hot coals. I usually have grill @ 400 and turn twice at 10 minute intervals. Overall cook time 30 minutes.
You cannot stop growing old but you don't have to grow up. 🙂

It's even better if you make the gravy from scratch, from the cooked sausage drippings. Little more time consuming but, well worth it.

a key part of my "fast" food meals is precooking hamburger meat, chicken meat, and homemade soup, packaged in 1-meal portions. I also take cooked bacon and precooked sausage patties.
I can make tacos, chicken alfredo, and omelettes in a jiffy.
Sometimes I cook up mini meatloaves and chicken wings to take in the freezer.
I use packed mixes or jars of alfredo sauce, taco mix, gravy mix and cheese sauce mix.
My vegies are store bought frozen.

Basic Sausage Gravy & Biscuits

8 package of buttermilk biscuit dough
6 eggs
Store bought peppered gravy mix
lb breakfast sausage
1 cup cheese, shredded
1/2 cup milk

-Grease a 13×9 pan and heat oven to 350
-Brown the sausage in skillet and drain
-Cut biscuit dough into 1? pieces, and line the bottom of the pan
-Layer cooked sausage over the biscuit pieces, then layer shredded cheese over sausage
-Whisk eggs and milk, add salt and pepper and pour over biscuit/layers
-Make gravy according to instructions, and pour over everything
-Bake for 35-45 minutes @ 350 degrees, or until eggs and biscuits are cooked through

No mess omellettes: Crack a couple of eggs open into a quart ziplock baggie. Add veggies. Colse and mix well. Toss into a pot of boiling water for 10-13 minutes. Dump on a plate and top with cheese.

Sausage and Kraut
Serves 3-4

1 lb of kielbasa/smoked sausage/whatever sausage you prefer.
1 jar of sauerkraut
dark brown sugar

In a cast iron fry pan sear the sausage. Lower the heat and pour the kraut on top of the sausage. Sprinkle brown sugar on top to taste. Cover and simmer about 20 minutes.

Option: you can also add leftover cooked potatoes to the pan.
