Where are you planning on staying in the Houston area? I have no suggestion as we have not been through Houston, only Galveston.

We wanted to but decided to postpone to a later trip. From what I read on that it seems to be best if you are on the site.

No reservations should be no problem so don't worry, just be flexible. We use the RVPARKY app while on the road to find parks along our route. We start looking about 2-3pm and call the park we pick to check availability. We have never been shut out.
Have you thought about how to handle your mail for that 2 month timeframe? Post office will only hold it for 30 days.
