Every now and then someone asks for easy OTR meals and someone always mentions the baked rotisserie chickens that can be found at most stores these days.

Here's a thread dedicated to ideas for the leftover rotiss chicken. I'll start it off with an easy one.
1. Fried Rice.
Leftover rice.
Leftover vegetables.
Leftover chicken shredded.
Scrambled eggs.

Feel free to add to the list. Let's see if we can come up with 50 ideas or more.

If there's not enough leftover rotiss chicken, use the shreds combined with other leftover meats to make tacos or burritos.

Make a salad. Leaf Lettuce, radishes, bell peppers onions, carrots, strip chicken meat off of bones then put in salad with swiss cheese of whatever cheese you want.

Easy Chicken Divan:
Chicken chunks
Can of broccoli or mushroom soup diluted with a bit of water or milk
Cut up broccoli + mushrooms, onion -
Mix above and put in casserole
Top with mixture of butter, bread crumbs and parmesan cheese
Bake/micro until bubbly hot

Chicken pot pie

Shred the chicken
Casserole dish ....layer if corn tortillas, enchilada sauce, chicken, cheese, jalapenos.
Repeat layer
Bake in oven at 350*F for 35 minutes/covered...then uncover/10 more minutes



Shred chicken
Canola oil in skillet
Warm corn tortillas in microwave for 25 seconds....wrap them in damp paper towel
Then roll them up with chicken and fry.....2 minutes each side
Seer with fresh guacamole


Chunk the chicken
Mix with diced onions, celery, sweet pickles---salt/pepper & mayo
Lightly toast bread of choice
Chicken salad sandwiches
Serve with chips

Canned biscuits and make chicken and dumplings the easy way. Get a cooked chicken hot at Sams club, strip all the meat while it is warm. boil the bones well to make broth, and have dumplings with a LOT of chicken.

1.Yellow rice kit with the leftover chicken.

2. Box of chicken broth, dice a potato, carrot, chop onion and celery.

Sauté, add broth, boil a few minutes, add bag of wide noodles.

When noodles are near done, add diced chicken.

Add water or broth as needed.

3. Chicken salad with mayo, green onion, relish, boiled egg.
