Can we talk about LIMA BEANS, please

We lightly steamed a frozen package of baby limas last night.

Not good. Not mushy but tasted old or off at bit. Beans were not a uniform size and different shades of green.

This was a store brand, not one of the biggie brands. Can you recommend a good frozen brand of lima beans, please. Thanks.

I've not found any brands of frozen lima beans that I cared for. Canned, on the other hand, I've found lots. My favorite is Allens, an Arkansas company that likely sells only regionally (South Texas and the Hill Country included in their region). They cook 'em up the Southern way, and are great right out of the can.

The difference between store brands and national brands is in quality and quantity most of the time. A person will always be better off buying name brands on sale.
Dry lima's is a good option, spice them on the presoak, boil 3 minutes and soak 1 hr, then finish.

The canned kind are generally of higher quality, more uniform in shape, coloration, and just generally a better experience. Did I mention that they come in a colorful can? Hahaha

TexasShadow, not to worry as I am the local head of the KBHA. (Kidney Bean Haters of America). We do like Pinto beans and white Navy beans, however. Cuban black beans are also good.

Had not thought of canned limas and will investigate; as well as trying to find some of the brands of frozen limas mentioned.

Pict-Sweet or McKenzie brand are both good. I have not seen a frozen Lima bean only frozen Baby Limas. Anyway, both brands of baby limas are good...

Beans Beans, good for the heart, the more you eat the more you ----! Momma used to say that you had to cook the "wind" out of them beans. I love Lima Beans, the green ones and the dried ones soaked and cooked with ham hock.

I feel badly for turning this into a Lima Bean Hater Thread.

Noel, when I've been forced (at gunpoint) to add Lima Beans to any recipe, I've used the canned Del Monte brand, as they're somewhat edible, not over cooked, ummm, what else? Oh yeah, packaged in a colorful can.

Del Monte is possibly a regional thing (or check at Safeway)
