Potluck ideas?

We are doing a BBQ potluck with ex-co-workers, burgers & hotdogs.

Looking for ideas for a couple of potluck items to make while camping, something not to difficult, but unique. Not looking to bake but do have crockpot.

Just thinking about BBQ and what I would serve with it, these would be easy to prepare in the crockpot in the camper.

1. Baked potato salad (bake potatoes in crock pot) Recipe
2. Grape salad - recipe
3. Hashbrown casserole
4. Pineapple Casserole

Who doesn't like caramelized onions on a burger or a hot dog?

Jalapeno Jam-- in a large pot pour in a gallon jar of sliced pickled Jalapenos (I chop them fine but you can just use them as they come), add one pack of lemon Kool Aide, add 2 quarts + or - of sugar, boil in pot until sugar melts and begins to thicken. 15-20 minutes depending on amount of liquid in Jalapeno jar, be careful not to let it get to thick or you will have jalapeno rock candy. Generally when it starts to sheet off of a spoon it is thick enough to be like jam when cooled in a refrigerator. Let it cool,then put it in the refrigerator to thicken and serve with cream cheese and crackers.

We do this in slow cooker

Baked Beans

1 can Pork and Beans (15 oz.)
1 can kidney beans (15 oz.)
1 can lima beans and ham
1 lb. Bacon
1 lb ground beef
Onions as desired

Sauce
1 tspn salt as desired
1 cup ketchup
¾ cup brown sugar
2 tbs. Vinegar
Brown bacon and ground beef.
Drain beans except pork and beans.
Mix together with meat.
Heat sauce and pour over mixture.
Bake 1 hour at 350 degrees

Cole Slaw is a requirement with BBQ. Several different styles and recipes. One of our camping friends has a special version for hot dogs. Its her secret recipe, and is very good.

Baked beans are great in the crockpot! And they go with the burgers & hot dogs for sure.
