Smoked or BBQ'd

While at Costco today I purchased a BBQ Beef Sandwich with coleslaw on the bottom. Thought I remembered Super Dave posting a picture of a smoked or bbq'd brisket sandwich with coleslaw and remembered thinking it may taste strange, however, that sandwich from Costco was delicious! I'm sitting here going through posts trying to find Super Dave's pictures, however, no luck. Does anyone remember that post or am I reinventing what he posted? Anyway, thinking about all of Super Dave's recipes . . . has made me start drooling! :B

I'm a devotee of this guy: Malcomb's Pulled Pork

Malcomb's recipe for Pulled Pork is a page-turner. It is so detailed that you can't possibly fail. The final product is a work of art but the methodology is pure science. You may have to invest in a couple of gadgets but the end justifies the means.

No offense intended. Sarcasm is my strong suit.

I cannot even bbq, more less use a smoker! Before my husband suffered a TBI he did all the BBQ'ing so I never messed with it as he was the master. Smoking just seems like a huge, involved process that I am uncomfortable trying, but baking/roasting I CAN do! Suppose that is why I enjoyed Super_Dave's posts so much as I could live vicariously through his food adventures!

Look into getting a Cameron Stovetop smoker. I do not have one but have spoken to several people who have and they all think they are great for indoors. A teacher at a culinary school I have attended said in a pinch this beats no smoke and does a decent job.

Smoking and BBQing can be as simple or as complicated as you want it to be.

I started out with a simple (and cheap) Brinkman's electric water smoker. These are very common and sold at places like Walmart and Home Depot for $60-$80. Just put hot water in the pan, add a few water-soaked chunks of hickory or mesquite around the electric element and you're ready to go. I cooked 4 chickens at a time on 2 racks on mine all the time. Rub them with your favorite spices and inject them with Cajun Injector Creole Butter. Plop them on the racks and go away for a while. They're done when the leg bone gets real wiggly and pulls free. The hot water evaporating from the pan makes for super moist chicken/turkey/roasts. Easy.

Like several here, I now have a GMG Davey Crockett pellet grill which travels with me in my Full Timer life. Very easy to put a Tri-Tip on it and then let it slowly cook to perfection. But I still miss my water smoker.

Real smoked BBQ can be a lot of work if you enjoy that, as I do. I've got a large wood-burning smoker and I love to fire it up at every opportunity. This past weekend I did a 16 hour overnight brisket cook for a neighborhood gathering.

But, there is another way! My buddy received one of these as a gift from his employer: Green Mountain Davy Crocket It is, dare I say it - idiot proof. Fill the hopper with wood pellets, set the temp, insert meat and come back when it's done. Oh, did I mention it is WiFi enabled and will communicate with your smart-phone?

It weighs just under 60 lbs and with the legs folded, it will fit in a storage bay. I will own one for traveling in the motorhome.

Oh come on now - YOU CAN DO IT! Can you follow directions and a recipe?

Agreed and I think you are being too dismissive of your talents:).

I live in a high rise so the only times I can easily smoke or BBQ is when I go camping which in my world is currently done with a tent and few specialised cooking tools/appliances.
Still with a few mods (aluminum foil is yer friend:D), some winter reading, and the will, I can smoke ribs, chickens (mostly Cornish hens)or fish/seafood on a teeny tiny Weber Go Anywhere.

My favorite all around book is Steven Raichlen's 'The Barbecue Bible" because he covers wood, charcoal and propane cooking in depth and answers a lot of the nagging questions that you sometimes don't think to ask until the grill is already heated;). Concise writing, good definitions; "Why didn't I think of that?" shortcuts, and enough food porn pictures to make your tongue hang out.

HTH and looking forward to living vicariously through your live fire cooking:cool:.

Shortie, if my picture had cole slaw on it, it was probably a pulled pork sammich. For my brisket or beef sandwiches I usually stick to a garlic aioli on a toasted roll.

Agree - if you think a smoke flavor sandwich from Costco was good, you should try the real thing. Try it! For beginners I reccommend:

Pulled brisket Sammie's are delicious. Like mentioned, Chuck roasts work well also.
