I need a one-man camper for boondocking and don't want to bother with any inverter or converter, generator or solar. I'd just as soon not bother with electricity at all.
Water from a tank that is pressurized with a hand or foot pump. Heat from a radiant, propane heater. Refrigeration from a manually lit and controlled propane refrigerator. Propane mantled gas lights for illumination and a stove for cooking.
All the trailers I see today are chocked full of power-needy appliances. Even the teardrops have microwaves and electric coolers. What's a boondocker to do? Having a TT custom built is out of this ol' retired school teacher's means.

Not knowing your budget or your work skills, I would suggest you look for a foamy or other home made trailer design and build it yourself. Some of the simplest trailers come from home workshops and not factories.

There are a large number of designs and procedures. The above is just a small example of possibilities.

How about a nice tent with a cot?
I like a wall tent with a wood stove best or a 16 foot tipi.

Convert a cargo trailer. Anything from a cot and a cooler to all the stuff found in commercial travel trailers. Lots of fun, on my second one now.

You are not going to find a camper that does not have electric setup, but that does not mean you have to use it !

Check out a Scamp or a Casita.

holy moly, that guy did a nice job on that old horse trailer.

There is a couple ( Bill and Deb ) on youtube that converted a cargo trailer and they are out in it now with continuing videos. He did many videos as he built it.

I used to have a hybrid trailer. I took it out in cold weather and slept in it closed up. I left the anti-freeze in place. I used the stove and that was it. I used a portable propane heater. You can easily ignore the modern gadgets if you want to.

The only fridge I know of with no electrical requirement is usually called a cooler. Just add ice and, presto, cold food. Seriously, a nice cargo trailer with 2 batteries will run an RV fridge for at least a few days without solar. Since you won't be using electric for anything else, and the trailer will be bare bones, you could install more than 2 batteries and extend your stay.
