There no need to cut the PEX at all ... just buy a valve with a threaded end of the appropriate diameter & sex to match the existing termination on your low point drain lines. This one would screw directly into trailer's such as mine that use threaded plugs to seal the low point drain lines ...
... but female versions are also available that would screw on to a capped low point drain line.
When I go to the store and that's what they have it works for me

I like the idea of garden hose fitting on the end (and I have one on the cold low point),if not to drain away from rig , but to hook hose for washing anything outside with onboard pump or hooking up to black flush to rinse tank when there is no fitting on dump station hose.
