Sweet potatoes...am I late to the game?

As a lifelong potato junkie, I've finally discovered that sweet potatoes can be enjoyed beyond baby food and Thanksgiving. Restaurants are offering sweet potato fries instead of french fries. Healthier or not, I'm in love with this spud.

From sweet potato pancakes, to mashed, to loaded baked, I never seem to have to fight the family to eat them. Do you have camping-friendly recipes to share?

Here's the recipe I used for sweet potato pancakes. I subbed leftover cooked sweet potatoes for the pumpkin. Came out great. Sorry, I don't know how to make a clickable link. These also froze well in baggies so I could reheat just a few. I was particularly attracted to the buckwheat flour because buckwheat is on my "good to eat" list on a breast cancer survivor's diet. But if you don't have it, use AP I guess. Also note buckwheat flour is dark so the pancakes will have a darker tinge. Buckwheat also is a very complimentary flavor to buttermilk. This batter can also be used in the waffle iron.

I've got a recipe for sweet pots to pancakes somewhere. With buckwheat flour. Very healthy. I'll see if I can find it.

Oh wow. Another amazing recipe to add to my collection!

Three days in a row, I've tried the recipes posted here. I think I'm turning orange!

2 40 oz cans canned yams
1 cup pecans
orange juice
maple syrup
honey
cinnamon
cloves
nutmeg
brown sugar
1 tub Philly honey nut cream cheese
1/2 block reg. cream cheese
eggs
brown sugar
1 stick butter/oleo
flour

In food processor, blend drained yams, about 1/2 cup OJ, about 1/4 cup each of honey and maple syrup, a few shakes of each of the spices, and about 1/4 cup brown sugar, and 2 eggs. Process until very smooth. Put in casserole dish. Wash processor. Next, place both cream cheeses in, one egg white, dollop of honey, and blend. Scrape out over yams. Wash processor, dry well. Next put ~ 1 cup nuts in, 1 stick butter, ~ 1/2 cup brown sugar, ~ 1/4 cup flour, and a couple of shakes of cinnamon. Process, pulsing, until nuts are broken and mixture is crumbly. Sprinkle evenly over cream cheese.
Bake at 350 for about 45 min., keep an eye on topping, if it starts to get too dark cover with foil. This is mouthwatering.

Had leftovers and made this, it was quite tasty

Curried Potato Salad

2 cooked white potatoes
2 cooked sweet potatoes
(baked or boiled or microwaved, cooled)
1/2 cup mayo
1 Tbsp fresh lemon juice
1/2 tsp lemon zest
1/2 tsp curry powder
1/2 tsp dried coriander
1 packet of sweetener or equivalent
fresh ground black pepper

Mix all the dressing ingredients (everything except potatoes)
Cube potatoes and toss.

If you're adventuresome toss in some raisins, chopped celery, green onions, whatever.



My guess is you could probably use half mayo and half low fat/sugar free lemon yogurt, too, and leave out the packet of sweetener.

hmmm, dried cranberries and maybe walnuts would be good stired in, too. A little antioxidant!

I like to put four small pork chops in a small crock pot and add a half cup of liquid like OJ or crushed pineapple and put two clean whole sweet potatoes on top. If the sweet potatoes don't get totally cooked I will zap them for another minute or two. It is really good with cinnamon. It smells so good when we open that trailer door after hours of Bluegrass music.

We love sweet potatoes and use them frequently. Use them in veggie soup in winter, DW uses them with roast, carrots, onions, gravy. Down here in Louisiana we have a product called Sweet Treat. It is Cinnamon, sugar, and pure vanilla. Put it on a baked sweet potatoe and it is great, on top of ice cream it is great, even making cinnamon toast it is great. Cajun Power is the company and Sweet Treat is the product. Try it, you will love it. I am not connected to the company in anyway.

I tried Devon Alexander's recipe from The Biggest Loser but it
included ground turkey which doesn't do it for me at all. My
adaption is colorful and flavorful. There are actually three recipes
here that make up the sweet potato recipe...all useful on their own.

Southwest Loaded Vegetarian Sweet Potato
Makes Two Servings

Ingredients:
Two sweet potatoes
4 oz. can of chopped green chilies
Salsa โ€“ can be jarred or fresh your choice and quantity as well.
2 T. Fatfree greek yogurt
See my recipe for Mexican Corn Salad
See my recipe for guacamoleโ€™ or just buy some

Nuke the sweet potato until done: individually about 5 โ€“ 6 minutes

Cut sweet potato in half and place in a bowl or plate. Open to prepare for stuffing it/topping it

Top each sweet spud with the following:
1/3 cup (more or less to your liking) with Mexican corn salad
2 oz. Chopped Green chilies
Guacamoleโ€™ โ€“ amount is up to you
Green yogurt
Salsa

Mexican Corn Salad recipe:
1 can of black beans, 15 oz (or kidney beans)
1 can of corn, 15 oz?
1 can of diced tomatoes with green chilies
1 small onion chopped up finely (red looks better but often I use plain old yellow onions)
One bunch of cilantro, chopped finely (I really like cilantro so I use it all!)
Juice of one lime

First, in a colander, drain the black beans. then add the canned corn and diced tomatoesโ€ฆ.let drain. Meanwhile, chop up the onion.
In a medium sized bowl add all ingredients and stir well.


Notes: I sometimes serve loaded sweet potatoes with a salad; sometimes I don't.
Mexican corn salad becomes a burrito with the addition of a wrap, cheese, maybe some leftover chicken...nuke and add guacamole.

Donna's Guacamole' recipe:
One ripe avocado (I use the small Haas ones for more flavor. I find the bigger ones less flavorful)
Juice of one lime
1 T. chili powder
Dash of garlic powder to your liking
Dash of onion powder to your liking
Jarred Salsaโ€ฆmaybe ยผ cup max? (to your liking)

Wash avocado and slice in half. Pop out the pit and scoop the avocado into a bowl. With a potato Masher, smash the avocado. I leave it somewhat chunky. Squeeze Lime to extract all juice; after struggling by hand squeeze juice, I bought a Lemon Squeezer which does a very good job (better than husband). Stir in lime juice, chili powder, garlic powder, onion powder, and salsa. Serve immediately. The lime juice somewhat retards it from turning brown but you really cannot keep this longโ€ฆor try covering it in plastic wrap.

I love them candied!
I make Candied Sweet Potatoes using the microwave, it's fast and easy!
Bake taters in microwave.
Peel, slice into bowl, add butter, brown sugar and cinnamon.
Bake again in microwave to melt butter and sugar. YUM!!

We love them baked, split, buttered and brown sugar sprinkled on....I am going to try a little cinnamon next time....mmmmm.

Give Jersey Sweets a try sometime. Yellow skin and meat instead of orange, and a milder taste, as well as less mushy when baked. Not better or worse, just different.

They make a good cold salad peeled, cubed and roasted, then tossed with black beans, red onion, yellow pepper, etc.

I make SP fries from scratch, just peel and cut into your preferred shape. Place them in a bowl with a little bit of olive oil and the seasoning of your choice and stir to coat. Put them in a single layer on a cookie sheet and bake in a 450 oven until crisp. I love them with a bit of salt, pepper, garlic salt and a good dash of chipotle chili powder. The combination of salty/spicy condiments is awesome on the sweet potatos.
