You're doing the classic fix for overheating. Congratulations on knowing how to do that.
I haven't worked on a Sprinter, but I think I need to ask three questions:
1. Does it have a Thermostatic Fan Clutch? And if so is it clutching IN? You would hear it roar.
2. Are you downshifting or lugging up the grade? More RPM will lighten the load on the engine, the transmission torque converter (major heat source) and provide more cooling since engine's water pump and fan are spinning faster.
3. Have you serviced the Cooling System? Radiator Fins clean outside, Tubes clean inside? New or known good Thermostat?
