I have the same truck as you, 2011 F350SRW 6.7PSD.
There is no switch for the exhaust brake. It is always there. To activate, you just need to tap the brake.
I used it going down the Sunwapta Pass on Highway 93 in the National Park. It kept the whole rig at a nice even 80kmh. No stress, no white knuckles, no moving from gas to brake and back again.

X2 I use it in our mountainous areas but on flat ground I do what you said-put it in drive and go. Just like with cruise control, I can control the truck better and get better fuel mileage when I control what the truck is doing. JMO

When I'm towing. I set T/H mode and forget it. It does the job it's supposed to on flat, up and down hills, and haven't had any issues.

If you are asking about Ford I don't know. On my Ram it is next to the TH button on the dash.
