Strawberry Cream Cheese Cobbler

Strawberry Cream Cheese Cobbler

1 stick ( 1/2 cup) butter
1 egg, lightly beaten
1 cup milk
1 cup all-purpose flour
1 cup sugar
2 teaspoons baking powder
1/2 teaspoon salt
2 quarts whole strawberries, capped and washed
4 ounces cream cheese, cut in small pieces

Preheat oven to 350 degrees. Melt butter and

pour into a 9-by-13-inch glass baking dish.

In a small bowl, mix together the egg, milk,

flour, sugar, baking powder, and salt.

Pour directly over the butter in the baking

dish, but do not stir.

Add the strawberries, arranging in a

single layer as much as possible.

Sprinkle cream cheese pieces over

strawberries. Place in preheated oven

and bake for 45 minutes, or until top is

golden brown and edges are bubbling.

(Crust rises up and around the fruit,

but fruit will still peek out of top.)

I made it last night using one quart of strawberries and one quart of fresh rhubarb. It was terrific! Just add an extra cup of sugar for the rhubarb. Served in a 9" X 13" baking dish and cut into 12 pieces, you're looking at 300 calories -- less if you make your own yocheese using fat free yogurt.

I'm a fan of strawberry/rhubarb pie so it came to mind pretty fast.

We use a similar recipe but with peaches. The only difference is we add boiling water just before putting it in the oven. I don't know why, it is just my mother in law's recipe. Looking forward to trying it with strawberries and cream cheese.

The rhubarb is ready and I have some "Yocheese" and/or Greek yogurt to substitute for the cream cheese. (Yocheese has worked well before as a low-fat alternative.) I'm going to try a mix of strawberries and rhubarb. Dessert is beckoning!

I have always made a similar cobbler recipe, but never with cream cheese. This is a must try. I love strawberry cobbler. Thanks, terry r.
