Whadya got?
Iโm a sucker for tomato-based sauces and Italian food in general so in my case I make Marinara sauce to my taste, then freeze it in single serving โsauce-ciclesโ. If Iโm travelling solo (as I usually am) one makes a meal, otherwise one per person. To that I add whatever pasta, rice, potato I want any any meat thatโs convenient.
Itโs surprisingly good over a crumbled burger patty & fries, rice & meatballs (premodern at home also), a ham steak & boiled patties, etc, etc, the list goes on forever.
Best of all, however I want to serve it, I can have a home-cooked (literally) meal in 15 minutes while on the road.

Last camping trip, I made meatloaf muffins, I have a muffin tin that makes 6 larger muffins, I just put the meatloaf in them. I froze them after they were cooked, these were great for camping

MEATLOAF! I love meatloaf so I always make about 5 lbs in 2 loaves.
I slice it in portions, wrap each in alum foil then freeze them in ziplock bag.
I can have a meatloaf sandwich or ad veggies and have meatloaf dinner in minutes.
You can also buy frozen White Castles in the grocery.

Our mainstay that we take is shredded pork. At home, I cook a pork shoulder in the crockpot with just onions, garlic, salt and pepper. Shred it up and split into several serving bags. On the road, we either add bbq sauce for sandwiches or make burritos by adding green chili/enchilada sauce or rotel and canned black beans and corn, plus other condiments on hand like shredded cheese, sour cream, salsa. You could do all this with chicken too.
Also, sometimes I precook a few hamburgers to freeze.

You can now get pressure cooker/air fryer combo units. You can also get a retro fit lid for Instant Pot that converts it to an air fryer.
