Favorite foods to make bulk and freeze for the road?

Usually thinking ahead, I like to prepare certain foods in bulk and freeze for the road. Problem was, can't stuff the smallish RV freezer too much, otherwise, it just won't keep stuff frozen (had ice cream bars melt prodigiously in short order). So, I opted to pick up a Dometic Dual Zone fridge/freezer (on sale!) to store extra foods for the road, and wondered what some of your favorites might be?

I make chili, soups, and cabbage rolls, and now that I can store more, I'm looking for easy, quick, delicious menu items I can make at home, and pack for the road.

Whadya got?

I make breakfast burritos. I cook up sausage, egg, frozen hash browns w/ onions and peppers, can of green chilies. Put in tortilla with cheese wrap separate with saran wrap then freeze in freezer bag. Heat with just a damp paper towel in microwave. Serve with green salsa. Perfect for the
day your traveling.

I also make ahead shredded pork or beef package for two add BBQ sauce.
Meatloaf, Lasagna, enchiladas, chili,etc.

I now use a Ninja 6-1 doesn't heat up RV and you can cook anything on it. I also have a PC sometimes take it.

Great ideas! Going have to check out the Ninja 6-1

I’m a sucker for tomato-based sauces and Italian food in general so in my case I make Marinara sauce to my taste, then freeze it in single serving ‘sauce-cicles’. If I’m travelling solo (as I usually am) one makes a meal, otherwise one per person. To that I add whatever pasta, rice, potato I want any any meat that’s convenient.

It’s surprisingly good over a crumbled burger patty & fries, rice & meatballs (premodern at home also), a ham steak & boiled patties, etc, etc, the list goes on forever.

Best of all, however I want to serve it, I can have a home-cooked (literally) meal in 15 minutes while on the road.

Great idea! I’ve never made homemade marinara or spaghetti sauce.

Last camping trip, I made meatloaf muffins, I have a muffin tin that makes 6 larger muffins, I just put the meatloaf in them. I froze them after they were cooked, these were great for camping

Great idea. I imagine they taste even better after the freezer.

MEATLOAF! I love meatloaf so I always make about 5 lbs in 2 loaves.
I slice it in portions, wrap each in alum foil then freeze them in ziplock bag.
I can have a meatloaf sandwich or ad veggies and have meatloaf dinner in minutes.
You can also buy frozen White Castles in the grocery.

Update: I opted for the Instapot Duo Crisp, which comes with an Air Fryer lid, and so far, have made Chili, Beef Stew, Goulash, and Cabbage Rolls... a flat of locally grown strawberries also included for something sweet... Also found the Instapot will fit within my sinks, so, there's the option of taking it along when on the road. Probably not necessary, considering the amount of food I've made, and filled my Dometic 75DZ with - about a month's worth of prepared foods, not including what the MH's fridge/freezer will hold... I think I've got this pretty well organized, and appreciate everyone's help and suggestions.

Though one doesn't really NEED the Instapot for most of these things, it does make the process easier, and takes much less time. And while I reluctantly committed to cleaning up my home kitchen, I'm much less desirous of this when on the road. If I can keep the ice cream from softening or melting, I'm good to go!

Thanks to all for your contributions!

Surgtech94....In a pot on the stove, I put a can of drained corn, 1/2 can of drained, rinsed black beans (we don't like the burrito to taste too beany), the shredded pork, and Rotel (tomatoes with green chilies). Sometimes I also put in green enchilada sauce. But you don't want it too soupy. Stir together and warm.

Place tortilla on plate and spoon in a bunch of the pork mixture. Fold as burrito. Top with sour cream and salsa...can add avocado, shredded cheese, etc. as desired.

Very simple and surprisingly delicious!

When we go to Nat'l parks we pack a lunch each day. Before leaving home, I go to our local meat market and get turkey, roast beef, cheese, ham etc. for sandwiches.
We put one sandwich "fixing" in zip lock bags, mark them with our name and freeze. When we make sandwiches before heading out hiking we put the sandwiches together. The frozen part helps keep everything cold.

Our mainstay that we take is shredded pork. At home, I cook a pork shoulder in the crockpot with just onions, garlic, salt and pepper. Shred it up and split into several serving bags. On the road, we either add bbq sauce for sandwiches or make burritos by adding green chili/enchilada sauce or rotel and canned black beans and corn, plus other condiments on hand like shredded cheese, sour cream, salsa. You could do all this with chicken too.

Also, sometimes I precook a few hamburgers to freeze.

I never thought of using the pulled pork for burritos. Do you just assemble and eat like that or do you use a sauce and bake? Thank you

It is kind of a no brainer to have cooking items that can do multiple modalities--and also can be used on a picnic table.

I have a george forman type grill that has waffle, grill, griddle and quesadilla plates.

You can now get pressure cooker/air fryer combo units. You can also get a retro fit lid for Instant Pot that converts it to an air fryer.

A little investigation showed that not all Instapots will accommodate the optional accessory Air Fryer lid... but most will... kinda leaning toward this, as the combo unit has less features than another which will accept the optional AF lid...

Again, many thanks to all who contributed, really appreciate it!
